Analisa Kadar Natrium Benzoat Pada Cabai Merah Giling Di Pasar Angso Duo Kota Jambi

Abstract

Dalam penelitian ini dilakukan analisis pengawet dalam cabai merah giling yang diperoleh dari pasar tradisional angso duo kota Jambi. Hasil analisis menunjukkan bahwa sampel tersebut mengandung pengawet Natrium Benzoat. Analisis kadar  rata-rata Sampel A diperoleh = 0,00007% Sampel B = 0,0003%  sampel C = 0,0002% sampel D = 0,0006% sampel E = 0,0003% dan sampel F = 0,0004%. Pemeriksaan Natrium Benzoat dilakukan dengan menggunakan spektrofotometer UV pada panjang gelombang maksimum 271,60 nm menunjukkan bahwa sampel cabai merah giling di pasar tradisional angso duo kota Jambi mengandung Natrium Benzoat dengan kadar rata-rata sampel   kandungan Natrium Benzoat dalam cabai merah giling ini tidak melebihi batas yang telah di tentukan yaitu maksimal 1 gr/ kg berat bahan (BPOM, NO 36, 2013).

ABSTRACT


In this study we analyzed the preservative in ground red chilli derived from traditional markets Angso duo Jambi city. The analysis showed that the sample contains the preservative Sodium Benzoate. Analysis of the average levels of Jambi A sample obtained = 0.00007% = 0.0003% B sample C = 0.0002% 0.0006% sample D = E = 0.0003% samples and samples F = 0.0004%. Sodium Benzoate is done by using UV at a wavelength of 271.60 nm maximum shows that the samples ground red chili in the traditional market town of Jambi Angso duo contains Sodium Benzoate with the average level of the sample content of Sodium Benzoate in ground red chili does not exceed the limits in the set is a maximum of 1 g / kg of material (BPOM, NO 36, 2013).
